Nice idea.  This will go into the next major release (0.9).

AFAIK, the priority of a message is denoted by the "Priority:" header and
the "label" is used internally by mozilla (so these cannot be changed but
one can filter based on the priority header).  Also, the "mark" action is
used in mozilla to change the flags of a message (flags are saved in the
server, imapfilter can filter based on these and/or change them).
